Here, on Arch Linux, lua 5.2.1 is not yet available, though preliminary packages ('lua51' and 'lua') were provided.

If I install those preliminary packages, the version check for lua still fails: yet the version tag for the 'lua' package is '5.2.1-1'.

This is a path issue.
IIRC the package (lua5.2) modifies the makefile to install include files in the 'wrong' place
(so they don't collide with lua 5.1). IMO that's an upstream issue, not an issue with GPick.
