For mail clients that support it, having mails expire can be a great benefit. Outlook supports Expiry-Date in an RFC 822 format which allows a mail to be housekept. 

Expiry-Date: Thu, 10 Feb 2011 16:55:39 +0000

If a configuration is present, e.g. sendmail.expiryDays, then a mail header should be added.

The default should be 0 to mean "do not add this header". 

Similarly, it would be good to add an Importance flag which allows mails to be marked as low priority. 

Importance: low 
Importance: high

I'd be happy to supply patches for these if you can point me to where the settings are parsed and where the mail construction Apis are.

Hmm, seems to be done in gerrit-server/src/main/java/com/google/gerrit/server/mail/SmtpEmailSender.java
