I'm on a single workspace, but in window actions I see the workspace
options. They disappear if I click minimize, maximize, always on visible
workspace/only on this workspace (whichever is not checked), then reappear
if I toggle it again.

Lviggiani is the expert on this.

I guess it is something more tightly related to WNCK than to the global menu applet.

I confirm that is a lib-wnck issue.
It is not possible to customize that part of the menu unless we re implement
Wnck.ActionMenu from scratch.
We can keep it as reminder for future releases.
